I decided that today would be a ‘spoil-Nick’ day. For those of you who don’t know, my husband Nick is the house-spouse in our relationship – i.e. he’s the one who does all the cooking, washing, shopping etc. He also helps me run my business – and we’re lucky enough to be home every day together.

We eat our main meal of the day at lunch-time, so usually he calls me down and we sit at the dining table together and chat as we eat.

So, I thought it was about time I took over the cooking for a day to give him a break! I’m not much of a cook – in that I don’t really enjoy every-day cooking. But when I do cook, I like to make something special.

Today, I decided to make spinach and ricotta ravioli with fresh pasta, from scratch. The last time I made fresh ravioli must have been almost ten years ago, but I remember how good it was!

Note to self for next time – take off the wedding rings!

After a LOT of kneading, I had a lovely ball of dough. I used this pasta recipe, and it worked brilliantly!

Then came the rolling. I don’t *yet* have a pasta machine, so I did it the ol’ fashioned way. I tell you, if I kneaded and rolled like this everyday, I would never again need to do any sort of upper-body strength training outside of the kitchen!

Then, I saw somewhere the cute trick of using a glass to ‘cut’ out the ravioli pieces – for round ravioli, rather than square.

Mmm, here we can see the scrummy filling! I used this recipe for that.

A little water round the edges, and another circle of pasta on top, whip around with a fork and voila!

Ready to go in the pot – dusted with flour to stop the ravioli sticking together!

And finally, what we’ve been waiting for! I made this sauce and garnished with some grated Parmesan and parsley.

The verdict was a big thumbs up (two of them, in fact, with mouth full!). I don’t think you can get much better praise, really.

This blog post makes it look so quick! It took me about an hour and a half of constant kitchen-time to get from start to plate.

Now, what should I make next month?
